The Quebec Cocktail was created to use French Red Dubonnet, which is more aromatic and bitter than American Dubonnet. However, American Dubonnet, which is sweeter and not very bitter at all, is much easier to find in North America. So if you are ordering this in an American Bar, you’ll get a much sweeter drink than you would if you were in Europe.
