The Red Velvet is made with equal parts of Dubonnet and Sparkling wine. It is not served in a champagne flute, but rather served in a rocks glass.
I wouldn’t go out of my way to make a Red Velvet. However, if you’ve got some left over sparkling wine and an opened bottle of Dubonnet that needs using up – it’s a perfectly fine drink to enjoy.
